The fresh mint and sharp onions in this recipe work perfectly with a mild white fish fillet. Give it a go if you're on a beach body diet...
Pan-fried Fish with Beetroot Salsa
Prep time: 10 minutes
Cook time: 8 – 10 minutes
4 small cooked beetroot, diced
8 spring onions, chopped
1 red chilli, seeded and chopped
2 tbsp chopped fresh mint
2 tbsp lemon juice
6 tbsp Flora Cuisine
Salt and pepper
4 fillets of unskinned, firm white fish
A little plain flour for dusting
First prepare the beetroot salsa. Mix together the diced cooked beetroot, spring onion, chilli, mint, lemon juice and 5 tbsp of Flora Cuisine. Season with salt and pepper.
Dust each side of the fish fillets with a little plain flour.
Heat the remaining Flora Cuisine in a large frying pan. Add the fish and fry on each side for 3-4 minutes until cooked through.
Serve at once with beetroot salsa.
