Chilli Beef Enchiladas
Prep Time: 15 minutes
Cooking Time: 30 mins
Serves: 4
Ingredients:
25g Flora Light Spread
450g lean minced beef
1 onion peeled and chopped
1/2 tsp hot chilli powder
400g can chopped tomatoes
1 red pepper diced
200g kidney beans, drained and rinsed
8 flour tortillas
55g cheddar cheese
White or brown rice (optional)
Method:
Melt the Flora Light Spread in a saucepan, add mince and onion and fry, stirring until the meat is browned.
Stir in the chilli powder, tomatoes and pepper. Bring to the boil and simmer for 20 minutes stirring occasionally.
Stir in the beans (baked beans work equally well!) and heat through. Season to taste.
Meanwhile heat the tortillas, then fill each with the chilli bean mix, wrap into a parcel and place in an over proof dish. Pour over any left over mix and sprinkle with cheese. If you've chosen to use rice you can either use it inside the enchiladas or as an accompaniment.
Place under a hot grill until the cheese has melted and serve with a mixed salad.
