Sometimes when you want to adapt an old favourite to suit a new diet you have to make sacrifices. In this case, you won't be needing any mash potato or gallons of cheese to make this fish pie.
All you will need is 10 spare minutes and some key ingredients for a simple but satisfying meal...
Quick Fish Pie
Serves: 2
Prep Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
225ml skimmed milk
2 tbsp plain flour
15g Flora Cuisine (45% less saturated fat than olive oil)
1 bunch spring onions
200g can of salmon or tuna in brine (drained and flaked) or mixed frozen sea-food
2-3 French bread slices
1 tbsp mature cheddar cheese
Salt and pepper to taste
Method:
Put the milk, flour and Flora Cuisine into a small saucepan and whisk well.
Cook while stirring continuously until the sauce comes to a boil and thickens.
Stir in the chopped onions, fish and seasoning to taste.
Spoon the mixture into a warm shallow heatproof dish. Arrange the bread on top and scatter the cheese.
Place under a hot grill until the cheese is bubbling and the bread is golden brown.
Now tuck in and enjoy!
