Stacey Solomon's Christmas Pudding Cupcakes Recipe
Stacey says, "These festive cupcakes are delicious and I love making them with the kids at Christmas time, they're always gobbled up in no time! They're also great for using up any leftover Christmas pudding that you might have in the house."
You will need: 12 muffin cases
- 250g Fox's Christmas Pudding or homemade pudding (cooked, cooled and crumbled)
- 150g butter
- 150g soft brown sugar
- 2 eggs (medium)
- 150g self raising flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground mixed spice
- For the icing:
- 150g butter
- 150g icing sugar
- 1 tsp cinnamon
- A dusting of icing sugar
Pre heat the oven to 180°C fan/350°F/Gas 4.
Cream the butter and sugar in a stand mixer until light and fluffy.
Add the eggs slowly, beating all the time.
Add the Christmas pudding and beat to incorporate.
Sift the flours into the mix and fold to incorporate using a metal spoon.
Line a 12 hole muffin tin with muffin cases.
Spoon the mix evenly into each case.
Bake in a pre heated oven for 20-25 minutes.
Once cooked place the cupcakes on a cooling rack and allow to cool completely.
For the icing: Beat the butter, icing sugar and cinnamon until smooth. Spread the icing onto each cooled cupcake. Decorate with a dusting of icing sugar.
