How to: Cranberry and port sauce to jazz up your roast turkey dinner

Prepare this simple sauce this morning and store it in the fridge until you're ready to stuff your face tomorrow...

Cranberry and Port Sauce

Serves: 8

Ingredients:

100ml port
100g sugar
450g fresh cranberries
2 x star anise
1 x cinnamon stick

Method:

Put the port and sugar into a saucepan.

Dissolve the sugar over a gentle heat.

Remove from the heat. Add the star anise and cinnamon stick and allow to infuse for 20-30 minutes.

Remove the spices and add the cranberries.

Simmer gently until the cranberries are tender and the port has reduced slightly.

Remove from the heat and allow to cool. The sauce will thicken a little as it cools.

Top Tops:

If you can't find fresh cranberries, frozen will work just as well.

You can experiment with other aromatics such as orange zest, allspice or ground ginger. Alternatively, use sherry or marsala in place of port.
