Lime, Mango and Cranberry Cake
Makes: 1 cake – 12 portions
Wright's Madeira Cake Mix 500g
Mango (diced) 1 large
Dried Cranberries 75g
Juice and Zest of 2 Limes
Plain Flour 50g
Oil 60ml (4 tablespoons)
For the icing:
Icing Sugar 100g
Lime Juice ½ - 1 lime
Zest of 1 Lime
Place the cake mix, lime zest, lime juice, flour, water and oil into a bowl.
Mix together to form a smooth batter. Add the diced mango and cranberries and mix well.
Pour into a well greased or pre-lined (2lb) loaf tin.
Bake in a lower half or a pre-heated oven 170C (340F, Gas Mark 3-4) for 55-60 minutes until golden brown and firm to the touch. Remove from a tin after 5 minutes and cool on a wire tray.
For the "Icing", mix the icing sugar with the lime juice to form a smooth paste and then pour over the top of the cake.
Finally sprinkle over the icing with the grated lime zest.
