In honour of Wimbledon 2012 winner Serena Williams, who follows a raw vegan diet, Rebecca Kane had created a yummy Raw Strawberry Tarts recipe.
6 dates and 3-4 Tbs of water
½ cup ground almonds
½ cup ground cashews
1 Tbs melted coconut oil
1 tsp vanilla extract
Pinch of salt
1 cup of cashews soaked for at least 30 mins
½ cup melted coconut oil
1 Tbs vanilla extract
2 Tbs agave
3 Tbs water
½ cup fresh strawberries
½ cup agave
1 - 2 Tbs dried strawberries
You will need a food processor, blender and tart cases
Place the dates and water into the food processor and process until you have a date paste. Place all ingredients in to a food processor and process until well combined. Press the mixture into the tart cases and place in the freezer to firm up.
Blend all ingredients together until smooth and creamy.
Blend all ingredients together until you get the consistency you are after. More dried fruit makes the jam thicker.
Pour cream into the tart bases.
Place your fresh strawberries on top of the cream.
Cover with the syrup.
