Rebecca Kane saw a dramatic health change after taking on a raw food diet, here's a tasty recipe from her collection

Wimbledon Raw Strawberry Tarts by Rebecca Kane
If you're interested in cutting out wheat, gluten and dairy, Rebecca Kane's book Turn Your Shine Onwill show you how to incorporate more raw foods into your diet.

Her second book Shine Inside and Out is jam packed with easy recipes with ingredients that you can find in the supermarket.

In honour of Wimbledon 2012 winner Serena Williams, who follows a raw vegan diet, Rebecca Kane had created a yummy Raw Strawberry Tarts recipe.

Ingredients
Base
6 dates and 3-4 Tbs of water
½ cup ground almonds
½ cup ground cashews
1 Tbs melted coconut oil
1 tsp vanilla extract
Pinch of salt

Cream
1 cup of cashews soaked for at least 30 mins
½ cup melted coconut oil
1 Tbs vanilla extract
2 Tbs agave
3 Tbs water

Strawberry Syrup
½ cup fresh strawberries
½ cup agave
1 - 2 Tbs dried strawberries

Topping
Strawberries

You will need a food processor, blender and tart cases

Method
Base
Place the dates and water into the food processor and process until you have a date paste. Place all ingredients in to a food processor and process until well combined. Press the mixture into the tart cases and place in the freezer to firm up.

Cream
Blend all ingredients together until smooth and creamy.

Syrup
Blend all ingredients together until you get the consistency you are after. More dried fruit makes the jam thicker.

Assembly
Pour cream into the tart bases.
Place your fresh strawberries on top of the cream.
Cover with the syrup.
