Thai New Year will be celebrated this weekend (13 -15 April) so now's the perfect time to celebrate with some tasty traditional Thai flavours.
If you've got no idea where to start, cooking ingredients specialists Very Lazy has come up with a few easy-peasy recipes to add some spice to your weekend.
Try these chicken skewers with rice, a fresh salad or with freshly stir-fried noodles...
Thai Chicken BBQ Skewers with a Sweet Chilli Dip
1 jar Very Lazy Thai Green curry cooking concentrate
4 chicken breasts, cut into long thin strips or small cubes
20 long wooden skewers, soaked in water
4 tbsp sunflower oil
For the chilli dip:
2 tbsp Very Lazy chilli
2 tbsp Very Lazy garlic
3 tbsp sunflower oil
2 tbsp palm sugar (or brown sugar) dissolved in 1 tbsp boiling water
1 tsp fish sauce
1 lime, juice only
Start by making the chilli dip. Fry the garlic and chilli in the sunflower oil for 1 minute.
Place in a small bowl; add the remaining ingredients and mix.
Place the Thai green curry concentrate in a bowl and add the chicken pieces, mixing well.
Thread the chicken into the skewers.
Brush the chicken with the olive oil and cook on a hot BBQ for 2 minutes on each side, or until charred and cooked through.
Serve with sauce on the side.
