Dan Lepard's Simnel Cake for Sainsbury's
Simnel cake is the traditional cake option at Easter time. Sainsbury's has teamed up with pro baker, Dan Lepard to bring us an exclusive recipe. All of the ingredients are available in the home baking section at your local Sainsbury's store.
125g unsalted butter
125g Fairtrade white caster sugar
25g golden syrup
3 medium British free-range eggs
50ml fresh double cream
1 teaspoon Taste the Difference Sicilian Lemon Extract
1 teaspoon Taste the Difference Valencian Orange Extract
50g ground almonds
450g luxury mixed dried fruit
175g plain flour
1/2 teaspoon baking powder
200g glace cherries
100-200g golden marzipan
Plus 200-300g golden marzipan and some jam to decorate
Preheat the oven to 170°C/150°C fan/335°F/gas 3 and line the base and sides of a 20cm round cake tin with non-stick baking paper.
Beat the butter and sugar in a bowl until light and fluffy. Add the syrup then one at a time beat in the eggs. Then stir in the cream, lemon and orange extracts, and the ground almonds, then mix well.
Stir in then dried fruit and cherries then add the flour and baking powder and stir evenly together. Spoon half the mixture into the base of the tin, smooth it down then cut cubes of marzipan and scatter them on top: enough to cover or to taste.
Spoon the rest of the cake mixture over the marzipan and bake for about an hour or until a skewer comes out clean. Leave to cool in the tin.
To decorate unwrap the cold cake from the baking paper, brush the top of the cake with warmed sieved jam then roll a disc of marzipan to cover.
Then roll eleven small balls of marzipan and arrange these around the top of the cake. If you like you can scorch the top of the cake under a grill or with a kitchen blowtorch.
