Granny Turner's Toad In The Hole With A Twist

Serves 4-6

Ingredients

6 Alf Turner's Hair of the Hog Sausages
2tbsp oil
110g (4oz) Plain flour
Pinch of salt
2 Eggs
150 ml (¼pt) ,ilk, mixed with 150 ml (¼pt) water
1 eating apple, cored and chopped into medium chunks
2 Leeks, trimmed and sliced

Method

Preheat the oven to 220ºC, Gas Mark 7.

Heat 1tbsp of the oil in a frying pan and lightly brown the sausages on all sides.

Meanwhile, sift the flour with the salt into a mixing bowl.

Make a well in the centre and break in the eggs. Whisk to make a paste, drawing in the flour. Add the milk and water a little at a time whisking to make a smooth batter.

Pour the remaining oil into an ovenproof tin sufficiently large to hold the batter (allow space for the batter to rise) and heat in the oven.

Once the oil is hot place the sausages, apple and leeks in the base of the tin and pour the batter over the top.

Bake for 40 minutes until risen, golden and crisp on top. Serve immediately with a selection of green vegetables.

Add lashings of gravy.
