Quick and easy homemade bread sauce recipe
- 1 large onion, peeled
- 12 cloves
- 570ml milk
- 2 bay leaves
- 10 peppercorns or a pinch of white pepper
- Pinch of grated nutmeg
- 110g fresh white breadcrumbs
- 100g butter
- 60ml cream (optional)
Cut the onion in half. Stud the onion with cloves and put into a saucepan with the milk and bay leaf.
Add the peppercorns, nutmeg and a good pinch of salt. Bring to the boil very slowly. Once boiling, remove from heat and leave to infuse for 30 minutes.
Strain the milk onto the breadcrumbs. Add the butter and cream (if using), mix well and return to the saucepan.
Reheat the sauce gently without boiling it.
Taste and adjust the seasoning if necessary. If the sauce is too thick, beat in a little hot milk. The sauce should have a creamy consistency.
Top Tip: Bread sauce freezes well so if you have any left over, put into a well sealed container.
