Thanksgiving recipe: Roasted pumpkin with chilli, garlic and lemon zest

It may not be Thanksgiving here in the UK, doesn't mean we can't eat the food now does it?

Pumpkins Thanksgiving
Pumpkins are a big hit with Americans throughout the Autumn. First they're hacked up and stuffed with candles for Halloween and then they're chopped, roasted and moulded into pies for Thanksgiving.

If you're not ready for sweet pumpkin pie (we know it's weird, right?) here's a tasty savoury option to get you in an all-American mood...

Roasted pumpkin wedges with chilli, garlic, chives and lemon zest recipe



Serves: 8

Ingredients:

1.2kg pumpkin, peeled
70g breadcrumbs
3 tbsp Very Lazy Chopped Chilli
1 tbsp Very Lazy Chopped Garlic
4 tbsp olive oil
30g chives, chopped
3 lemons, zested
Salt and pepper

Method:

Preheat the oven to 200C.

Cut the pumpkin into cm thick slices and lay them flat, cut side down on a baking sheet lined with non-stick paper.

Sprinkle with the breadcrumbs, garlic and chilli and drizzle with the olive oil.

Roast for 30 minutes, or until tender.

Place onto a platter and scatter over the chives, lemon zest and some salt and pepper.

Serve with a roast turkey or chicken for a tasty Sunday lunch or mix with lightly spiced cous cous for a simple supper.
