Great homemade soup doesn't have to be complicated and Jessie J has proven this with her latest foodie Tweet.
The Wild singer posted this snap of two soups on the go. The one on the left looks like a tasty mixture of leeks and courgettes, while the one on the right seems to contain carrots, butternut squash and sweet potato.
If you want to make your own simple soup like Jessie here are a few rules to follow...
1. Sweat finely sliced garlic, onions and celery in a pan until softened. Chop up your core veggies into medium sized chunks and cook them in the pan with plenty of fresh herbs. Try thyme with leek and potato soup or parsley with butternut squash. A few glugs of olive oil and salt and pepper are a must.
2. After ten minutes (or when the veggies are softened but still hold their shape) create a quick chicken or vegetable stock using a cube (or a fresh pot from the refrigerated aisles at your local supermarket). Pour in the stock and bring to the boil. Once it's bubbling turn down the heat a little, cover and simmer for about 15 mins.
3. Have a taste to decide if your soup needs more salt, pepper, herbs or a dash of spice. Once you're happy take everything off the heat and purée with a hand blender until smooth.
