Also posted in F&D Right, my team at work, for some unknown reason, has decided to launch a lose weight challenge so, other than salads, what other tasty ideas do you ladies have for low calorie lunchboxes?

I'm a big fan of brown rice or quinoa with veggies & lean protein, e.g. 1) fry onion & garlic in a pan 2) add chopped chicken or tofu 3) add whatever chopped veg you have (courgette, carrot, peppers, fresh fennel, chillies, leek, mushrooms, broccoli, whatever you have) 4) add some pine nuts/cashew nuts/sesame seeds 5) add cooked brown rice or quinoa 6) if you didn't add chicken, add some prawns If you make it with a high veg to rice/quinoa ratio, and use an olive oil spray for the frying, I'd say this is a pretty dang healthy lunch. You can make it the night before and eat it cold the next day.

Thanks little_yogi. Unfortunatley I can't abide cold rice. Sounds loke it'd be lovely hot though and I'd just never have the time to make something like that as it's usually after 8pm by the time I get home. I need something that can just be chucked from the fridge into my bag. And very cheap

Lately on Sundays I'll cook up three or four chicken breasts (usually put them in with a few other things to make the oven more productive!), chop them up and portion them out into tupperware containers. I am still trying to work out what's the best thing to have with the chicken mind! Last couple of weeks I was having a few chopped salad potatoes (again, I'd cook maybe a dozen on the Sunday) this week I had a couple of brown tortillas which I've cut into wedges and stuck in with the chicken, along with a Babybel light and an apple. today I also have carrot sticks - some days I'm hungrier than others after lunch but I think a lot of that is to do with how busy I am on any given day as well, if I'm not busy I tend to start thinking "hmm, what can I eat?" So my ideas do involve a bit of prep but once I've done that I just pop a tupperware box into my bag in the morning and I'm good to go. I keep brazil nuts and almonds in the desk drawer as well.

aaah! handbag keeps eatin gmy posts My recent favourite for lunch is wholemeal bread, pitta or wrap stuffed with lettuce and grated carrot with either prawns, tuna or chicken in a dressing of fromage frais with loads of freshly ground black better and chives. The dressing also goes nicely with just salad or a little spread on bread with any kind of meat.

When I'm at uni I normally take 2 carrots chopped up and a shot glass of houmous (seriously, the best way I have found of transporting the stuff in individual portions!), then maybe a lunch box of chopped pineapple, grapes or whatever other fruit I have hanging around. Also some oat :)cakes if I think I'm going to be hungry.

I work really long days too and sometimes the last thing I want to do in the evening is stand and make food (especially if I have been good and made the effort to go to the gym). So I have a cheeky stash of weightwatchers tinned soups in the cupboard. They are really yummy and very filling and great to just chuck in your handbag if you forget to make lunch! xx

Ryvitas are good with low fat cottage cheese and cucumber!

For little sweet treats I love the boots 'shapers' range of chocolate bars and popcorn etc, which are all under 100 calories and you can buy them in multipacks too..

Or I also love those 'flump' marshmallow twists which i discovered the other day are only 30 calories and great if you really fancy a tiny treat after just eating salad haha!!

xx
