hey all - my bf and i are trying to add one vegan day a week in - as a way of cutting back his massively meat orientated lifestyle. I dont eat much meat but I usually have fish or eggs or some dairy produce involved, so Im looking for any tasty, boy friendly, vegan recipes!

Hey Curly!
I am definitely not a vegan but do tend to make a few vegetarian meals each week. This recipe is so tasty and satisifying as long as you don't have a peanut allergy!

SOY MIRIN TOFU WITH PEANUT SAUCE

1 block extra firm tofu, pressed and cut into small squares
1 tablespoon canola oil
2 teaspoons soy sauce
2 teaspoons mirin
1 head of broccoli, steamed
1 carrot, peeled and shredded
Peanuts, crushed (optional)
1 cup dry brown rice

Peanut Sauce
1/4 cup peanut butter
1/4 cup water (or coconut milk if you have it!)
1 tablespoon sugar
1 tablespoon soy sauce
1 tablespoon seasoned rice wine vinegar
1 teaspoon hot chili oil
Pinch of salt
Start cooking your rice. Mix sauce ingredients until smooth and set aside. Pan fry tofu in the oil over high heat in a non-stick skillet until browned on both sides. Drain and return to hot pan (turn off the heat). Mix soy sauce and mirin together and pour over tofu, mixing well. It will bubble up and form a light glaze. Plate rice, add broccoli, tofu, carrot, and crushed peanuts. Drizzle with sauce and serve.
Note: if you don’t have mirin, use a combination of cooking wine and sugar.

Nice bacon sarnie -thats the ticket.
Actually, I'd rather just do a big veggie stir fry - keep it fresh, green,crunchy and simple with lashing of soy sauce.

right, here we go,

being veggie for 20 years, and vegan for just over a year now, i'll give you a treat...

to start with, you dont have to think about all new products to clutter your cupboards, think, a meal without the meat..

one of my fav's is a simple pasta dish,

lightly fry an onion or two,
slice up some peppers as well as some hot chillis (with seeds)
dice up any other veg you love

make a sauce using
passata,
garlic,
red wine,
balsamic vinegar,
maybe a splash of soy sauce,
basil

simmer on a low flame for as long as you can keep your mitts out of it,


add some garlic bread.....?

make a pizza base, (saint delia recipee is good) from "how to cook"
mix up some garlic puree and mixed herbs and butter (use vitalite if you want to make it vegan)
bake your pizza base for about 10 mins then take out, rub on your garlic sauce and bake for another 5mins or so,...


hey presto,

an easy, yummy vegan/veggie meal.



also, if you live in the UK, try buying in some Linda McCartney's range.
sausages, pies and sausage rolls are vegan,
all the rest are lacto - ovo vegetarain.
